Ingredients
- 500g pork mince
- 1 large red potato about 250g, scrubbed and coarsely grated
- 1 red onion coarsely grated
- 2 large garlic cloves finely grated
- 1 tsp cumin seeds
- 2 tsp smoked paprika
- 1 tsp chilli flakes
- 25g fresh parsley finely chopped
- olive oil spray for the air-fryer
- 150g bulgur wheat or couscous
- 1 tbsp olive oil
- 1 lemon cut into six wedges
- ½ cucumber diced
- 4 tomatoes chopped
- 2 tbsp fresh mint or coriander leaves picked and roughly chopped
- 200g tub of whipped feta, tzatziki or hummus to serve
