- 1 1/2 cups half-and-half
- 2 ounces fresh mozzarella, cut into small pieces
- 1 teaspoon salt
- 1 pinch nutmeg
- 1 egg yolk
- 1/3 cup heavy cream
- 1/2 cup grated Parmesan
- 1/2 teaspoon freshly ground black pepper
- For the cauliflower gratin:
- 2 1/2 pounds cauliflower, cored and cut into 1-inch pieces
- 1/3 cup hazelnuts, chopped
- 1/4 cup grated Parmesan
