- 1 15-ounce can white beans, rinsed
- 2 medium zucchini, quartered and thinly sliced
- 1 pound fresh spinach, stems removed
- 2 tablespoons cider vinegar
- 2 tablespoons freshly grated Parmesan cheese, preferably Parmigiano-Reggiano
