Curried Lentil Dip
Ingredients
- 1 can of Coconut Milk
- 1 1/2 cup dried red lentils (rinsed)
- 1 Onion, large, minced
- 1 tablespoon Garlic, minced
- Salt
- 1 tablespoon minced fresh ginger
- 1 1/2 cup Chicken Stock
- 1 tablespoon Olive Oil
- 1/2 teaspoon each ground cumin, turmeric, cumin, and black pepper
- 2 teaspoons Garam Masala Curry Powder
- 1/4 teaspoon ground red pepper
- 1/4 teaspoon ground cinnamon
- 2-3 Bay Leaves
- 3 tablespoons Cilantro (fresh), chopped
- Sweet Potato Chips (optional)
