Ingredients
- 1 skin-on whole salmon filet
- 2 tablespoons olive oil
- 1 tablespoon butter
- 3 cloves garlic, smashed
- 1 pinch red pepper flakes
- 1/4 cup mirin or dry white wine
- 1 pinch saffron
- 1 lemon, zested and juiced
- Salt and pepper to taste (Jacobson sea salt is the best)
- 1 handful fresh parsley and chives or other fresh herbs (basil and sage are great, too)
