Mushroom Bisque
Ingredients
- 1/2 cup dry sherry, plus more for serving
- 2 ounces assorted dried wild mushrooms
- 1 1/2 pounds assorted fresh mushrooms, such as button, shiitake, and/or porcini, coarsely chopped
- Kosher salt
- 2 shallots, chopped
- 1 tablespoon finely chopped thyme, plus sprigs for serving
- 3 tablespoons unsalted butter
- 1 1/2 cups store-bought or homemade chicken stock
- 1 cup half-and-half
- 1 teaspoon freshly ground black pepper
- Sour cream or crème fraîche, for serving
