Chicken Yellow Curry
Ingredients
- 1 pound chicken thighs or tenderloins
- 14 ounces can of diced tomatoes
- 14 ounces can of light coconut milk
- 1/2 large onion, diced
- 1-2 carrots, diced
- 1-2 tablespoons fresh ginger, minced
- 1-2 tablespoons yellow curry powder (depending on heat preference)
- 1/2 teaspoon ground coriander
- 2-3 tablespoons olive oil
- 1 tablespoon fish sauce
- salt and pepper to taste
- cilantro, chili peppers, lime, and green onion as garnish
