Ingredients
- 1 tablespoon olive oil
- 1 pound medium shrimp, peeled and deveined, tails removed
- Coarse salt and ground pepper
- 6 plum tomatoes, chopped (about 3 cups)
- 1/2 small red onion, chopped
- 2 garlic cloves, chopped
- 1/2 cucumber, peeled and chopped
- 1/2 cup finely chopped, jarred roasted bell peppers (we used both red and yellow peppers)
- 1 1/2 cups tomato juice
- 2 tablespoons red-wine vinegar
