- 1 Head of cauliflower broken down into flourets
- 1 cup Gruyere cheese (shredded using a box grater)
- 1 cup Aged cheddar cheese (shredded using a box grater)
- 1 Heaping tablespoon of corn starch
- 1/2 cup Unsalted chicken stock
- 1/2 cup White wine (Sauvignon Blanc, Pinot Grigio, something crisp and dry)
- 1/4 teaspoon Cayenne pepper
- Kosher salt and black pepper to taste
- 1/2 cup Panko bread crumbs
- 1 tablespoon Unsalted butter
- 1 tablespoon Finely chopped parsley or chives (for garnish)
- 1 Clove of garlic cut in half
