- 2 cups chopped cucumber
- 2 cups halved cherry tomatoes (1 pint)
- 1/4 cup sliced scallions
- 1/2 cup chopped flat-leaf parsley
- 1/2 cup chopped mint
- 4 ounces feta cheese, crumbled
