Chorizo Red Pepper and Feta Frittata
Ingredients
- 1/2 pound baby potatoes, unpeeled and left whole
- olive oil
- 5 ounces chorizo sausage, thinly sliced
- 1 red onion, thinly sliced
- 2 cloves garlic, roughly chopped
- 2 red peppers, roasted, skinned and roughly chopped (or use well-drained jarred roasted peppers)
- 8 eggs
- salt and freshly ground black pepper
- 5 ounces feta cheese, cubed or crumbled
- green salad, to serve
