Ingredients
  • 1 pound pitted prunes, quartered
  • 15 ounces package of raisins OR a combination of golden raisins, dried cranberries, dried cherries
  • 8 ounces dried apricots, quartered
  • 8 ounces dried figs, quartered
  • 3/4 cup bourbon
  • 1 1/2 cups unsalted butter, room temperature
  • 2 cups packed brown sugar
  • 6 eggs
  • 3 cups all purpose flour
  • 1 1/4 teaspoons baking powder
  • 1 1/4 teaspoons baking soda
  • 3 teaspoons cinnamon
  • 2 teaspoons salt
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon allspice
  • 1 teaspoon cardamom
  • 1 teaspoon grated lemon zest
  • 1 cup mashed ripe bananas (approximately 3 bananas)
  • 2 cups walnuts or pecans toasted and coarsely chopped
