Ingredients
- 2/3 cup soy sauce
- 1/4 cup fresh lemon juice
- 1/4 cup fresh lime juice
- 3 tablespoons plus 1 teaspoon sugar
- 2 teaspoons finely grated peeled fresh ginger
- 2 teaspoons Asian sesame oil
- 2 lb large sea scallops (30), tough muscle removed from side of each if necessary
- 2 teaspoons vegetable oil
- Garnish: 2 teaspoons sesame seeds (preferably black),toasted
