- 2 small or medium spaghetti squash
- 2 teaspoons olive oil, plus 2 tablespoons - divided
- Salt
- Pepper
- 1 yellow onion, diced
- 4 garlic cloves, minced
- 8 ounces crimini mushrooms, diced
- ½ teaspoon garlic powder
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2 cups chopped and stemmed kale
- 1 (26 ounce) jar of your favorite tomato sauce (I use Trader Joe's Tomato Basil Marinara)
- 1 cup shredded mozzarella cheese
- 2 tablespoons grated parmesan cheese
- Chopped parsley for garnish
