Ingredients
- 1 cup raw quinoa (yellow or tri-color)
- Water
- 2 tablespoons fresh lemon juice
- 1/2 tablespoon ground coriander
- 1/2 tablespoon ground cumin
- 1 teaspoon paprika
- Table Salt
- Freshly ground black pepper
- Half a red bell pepper, deseeded and finely chopped
- 1/3 cup sweetened dried cranberries
- 1/3 - 1/2 cups of any 1-2 of the following ingredients: halved grape tomatoes, chopped walnuts, chopped cucumbers, OR crumbled goat cheese
- 3 green onions, white and green parts, thinly sliced
- 1/4 cup chopped fresh cilantro leaves
