Quinoa Stuffed Squash
Ingredients
- 4- 1 pounds Winter squash such as Amber Cup or Golden Nugget
- 8 ounces Sausage, any kind you like but if you use pork be sure to drain all but 1 tablespoon of the fat left behind after cooking
- 1/2 cup carrot, roughly chopped
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 large portabella mushroom, roughly chopped
- 1 cup uncooked quinoa
- 2 cups water
- 2 tablespoons fresh flat-leaf parsley
- 1 teaspoon fresh thyme
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 4 ounces cheddar or Monterey Jack cheese, shredded
