Quinoa Stuffed Peppers
Ingredients
- 3 cup vegetable or chicken stock
- 1.5 cup Quinoa
- 2 each Red, yellow, green bell peppers. Tops cut off and seeded
- vegetable oil for casserole dish and outside of peppers
- salt to taste
- .5 teaspoon cayenne pepper
- 2.5 tablespoon olive oil
- 1 medium onion, diced
- 2 cup butternut squash, finely diced
- 1 bunch spinach, blanched for 2 minutes, dried and chopped
- .5 cup shelled pumpkin seeds and more for garnish
- 2 cloves garlic, minced
- 6 ounce feta, crumbled
- 1/8 cup chopped fresh oregano
- 1/8 cup finely chopped thyme
- salt
- lemon juice
- .5 cup water
