crunchy quinoa veggie roaster
Ingredients
- 3 cups cooked quinoa (leftover is ideal)
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried basil
- 1 teaspoon fennel seeds
- 1 teaspoon dried oregano
- 1 teaspoon garlic, minced
- 10 mushrooms, quartered
- 1/2 red onion, diced
- 1/2 red pepper, diced
- 12-15 cherry tomatoes, halves
- 1/2 cup pomegranate seeds
- 1/4 cup kalamata olives, quartered
- 1/2 cup fresh parsley, rough chopped
- 1/2 cup crumbled goat or feta cheese (optional if you want it vegan)
- salt and pepper
- olive oil sprayer, or 1-2 additional tablespoons olive oil if you don't have a sprayer
