- 1 jalapeno pepper, diced
- 4 cloves garlic, diced
- 2 tablespoons olive oil
- 1/2 cup quinoa, uncooked
- 1 (14 oz) can diced tomatoes, including liquid
- 1 (14 oz) can black beans, drained and rinsed
- 2 1/2 cups vegetable broth, low sodium if possible
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 1/4 teaspoon cacao, or cocoa powder
- 1/4 teaspoon cinnamon
- 1 avocado, diced (to garnish)
- 1 bunch fresh cilantro, roughly chopped (to garnish)
- Pinch sea salt & pepper, to taste
