Ingredients
- 1 chipolet chili
- 2 tablespoons olive oil
- 1 medium red onion, diced
- 2 stalks celery, diced
- 1 clove garlic, minced
- 1/2 teaspoon cumin seeds, crushed
- 2 large dark sweet potatos, peeled & diced
- 4 cups vegetable broth
- Pinch salt
- 2 - 3 cobs of corn
- 1/2 cup sour cream
- juice & rind from 1 small lime
- small handful cilantro, minced
