Ingredients
- 1 1/4 cups small pearl tapioca
- 1 pound orange sweet potatoes (about 2 medium), peeled and cut into 1/2-inch chunks
- 1 1/2 pounds purple sweet potatoes (about 2 large), peeled and cut into 1/2-inch chunks
- 2/3 cup rock sugar (150 grams) or granulated sugar
- One 13.5-ounce can Thai coconut milk
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon kosher salt
