Lamb Hotpot
Ingredients
- 2 pounds lamb leg meat, sinew and excess fat removed and cut into 1 1/2 inch pieces
- Salt and pepper for seasoning the lamb cubes
- 3 tablespoons olive oil, divided
- 1 large onion, thinly sliced
- 4 medium carrots cut into 1 1/2 inch pieces
- 2 cloves garlic, thinly sliced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/4 teaspoon dried thyme leaves
- 1/4 teaspoon dried rosemary leaves
- 1/2 cup dry white wine
- 8 ounces thickly sliced brown or white button mushrooms
- 3 tablespoons AP flour
- 4 to 5 medium Yukon Gold potatoes,peeled and sliced into 1/4 inch rounds
- 1 cup chicken broth
- 2 tablespoons butter, divided
