Shiitake Mushroom Enchiladas
Ingredients
- 1 ear of corn, kernels removed and dry roasted
- 8 corn tortillas (6" diameter)
- 1 cup grated pepper jack cheese
- 1 small white onion
- 3 cloves of garlic, minced
- 3 tablespoons chopped cilantro
- 1/2 pound shiitake mushrooms, washed, stemmed, and thinly sliced
- 1 large poblano pepper
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup milk
- 1/2 teaspoon chili powder
- pinch cayenne pepper
- oil for cooking
- salt and pepper to taste
