- 1/2 teaspoon ground nutmeg

- 1 quart milk
- 1 cup grated Pecorino-Romano
- 3 egg yolks, lightly beaten (reserve whites for assembly)
- 1 stick butter, melted
- 1 pound bucatini pasta cooked to al dente (1 minute less than package instructions)
- 3 egg whites, beaten until foamy, plus 1 egg yolk
- 3/4 cup grated Pecorino-Romano
