- 2 tablespoons flour
- 1⁄4 cup cold water
- 1 cup shredded monterey jack cheese

- 3 1⁄2 cups sifted all-purpose flour or 3 1⁄2 cups whole wheat pastry flour
- 1 1⁄2 tablespoons baking powder
- 4 tablespoons chilled butter
- 4 tablespoons chilled vegetable shortening
- 2 teaspoons soy sauce
- 1 1⁄8 cups ice cold water
- 1 egg, mixed with
- 1 tablespoon water
