- 3 tablespoons extra virgin olive oil, divided
- 1 slice white sandwich bread

- 1 medium onion, diced (about 1 cup)
- 1 fennel bulb, cored and diced (about 1 1/2 cups)

- 2 medium garlic cloves, minced or pressed (about 2 teaspoons)
- 1 10-ounce package frozen chopped spinach, thawed and squeezed dry
- 1 to 2 pinches cayenne pepper
