• 1 red bell pepper - 1/4" dice
• 2 poblano peppers - 1/4" dice
• 1/2 red onion - 1/4" dice
• 1 teaspoon cumin
• 2 large cloves garlic - pressed or minced
• 1 cup milk
• 1/2 cup flour
• 1 cup sour cream
• 3 cups grated jack and cheddar cheese
• 12 corn tortillas
• 2 - 14.5 ounces cans diced tomatoes with chilis
