Pork and Chorizo Based Carne Guisada
Ingredients
- 1 pound pork loin or butt, cut into bit-sized pieces
- 1/2 pound Mexican ground pork chorizo
- 2 cups fresh (or canned) diced tomatoes
- 1 medium potato, any kind, diced small
- 1/2 cup chopped onion
- 1 tablespoon tomato paste
- 1/2 to 1 pepper from canned chipotle in Adobo sauce, minced small
- Juice from 1/2 lime
- Large pinch each of cumin, cayenne pepper, and crushed red pepper flakes
- Handful of fresh cilantro, chopped
