Ingredients
- For the Cajun Seasoning:
- 1 tablespoon (7g) sweet paprika
- 1 tablespoon (10g) granulated garlic
- 2 teaspoons (5g) cayenne pepper
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon granulated sugar
- 1/2 teaspoon ground white pepper
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon ground cumin
- For the Shrimp:
- 1 pound jumbo shrimp, peeled and deveined (16 ounces; 454g)
- 3/4 teaspoon Diamond Crystal kosher salt; for table salt, use half as much by volume
- 1/4 teaspoon baking soda
- 1 tablespoon and 1 teaspoon (12g) Cajun seasoning (recipe above)
- 2 tablespoons (30ml) neutral oil, such as canola, plus more as needed
- 1 tablespoon unsalted butter (1/2 ounce; 14g), plus more as needed
