- 1 cup steamed lobster meat (use shrimp, crab, salmon if desired)
- small handful matchstick-cut carrots
- 2 green onion, matchstick-cut
- 1 cucumber, peeled into large ribbon with a vegetable peeler
- 1 small red chili, sliced thin
- mint (as little or as much as you like)
- 1 tablespoon sesame oil
- 2 tablespoons reduced-sodium soy sauce, divided
- ¼ cup fresh lime juice
- 2 tablespoons fish sauce
- 1 teaspoon sugar
