Ingredients
- 1 1/2 lb. ground pork
- 1 medium onion
- 1 small zucchini
- 1 large egg
- 1/4 c. dried breadcrumbs
- 2 tsp. dried oregano
- 1/2 tsp. ground cumin
- Coarse salt
- ground pepper
- 1 can whole peeled tomatoes in juice
- 1 chipotle chile in adobo
- 2 tbsp. vegetable oil
- Cooked rice and chopped fresh cilantro (optional)
