Veggie Packed Black Bean Chili
Ingredients
- 2 tablespoons olive oil
- 1 large yellow onion
- 4 large (or 5 small) cloves of garlic
- 1 medium-sized red bell pepper
- 1 medium-sized green bell pepper
- 2 cups squash cut into 1-inch cubes
- 1 large carrot, diced into small pieces
- 2 tablespoons mild chili powder
- 2 teaspoons cumin
- 2 teaspoons dried oregano
- 1 teaspoon smokey paprika
- 1/2 teaspoon cayenne pepper
- 1 tablespoon chipotle pepper in adobo sauce, finely diced
- 3 cups cooked black beans
- 1 cup corn kernels (canned or frozen and thawed work)
- 1 1/2 cups of diced tomatoes (or 1 can)
- 1 cup water
- Salt, to taste
- 1-2 chorizo sausages, diced into small cubes (optional)
