- 1 tablespoon finely grated ginger
- 1 tablespoon low-sodium soy sauce
- 2 teaspoons toasted sesame oil
- 1 1/2 teaspoons sugar
- 1 (7-ounce) package green tea soba noodles
- 1/2 medium cucumber, cut into matchsticks
