- 1 tsp. coriander powder
- 1/4 tsp. red pepper flakes
- 1/4 tsp. cumin
- 1/4 tsp. turmeric
- 4 cloves garlic, minced
- 11/2 cup thin coconut milk
- 1/2 cup thick coconut milk
- 2 plum tomatoes, sliced
- 2 Tbsp. neutral oil for frying
