- ½-¾ cup mayonnaise
- 2 tablespoons Tony Chachere's Creole Seasoning
- 1 teaspoon of pepper
- Juice of ½ a lemon
- 15 oysters, cleaned, shucked, and removed from their shells, preferably Virginia Salt
- ½ cup milk, plus 1 tablespoon
- 1 tablespoon water
- ½ teaspoon cayenne
- 2 eggs
- 1 cup all-pupose flour
- ½ cup cornmeal
- 1-2 tablespoons salt
- Vegetable oil, for frying
- 1 baguette
- Cajun mayonnaise (see above)
- 1 cup shredded lettuce
- 1 tomato, thinly sliced
