- 3 tablespoons butter, divided
- 1 tablespoon olive oil
- leaves of one sprig of fresh thyme
- 1 cup diced onion
- 1/3 cup diced carrot (small dice)
- 2 tablespoons dry sherry
- 1 cup apple cider
- 1 1/2 cups water or vegetable stock
- 8-10 ounces sharp cheddar cheese
- 1/8 teaspoon ground cinnamon
- dash ground ginger
- dash ground nutmeg
- dash ground cloves (optional)
- kosher salt, to taste
- freshly ground black pepper, to taste
