- 1/2 cup Vegetable oil
- 1/4 cup Toasted sesame oil
- 3/4 cup Flour
- 1 large Onion ; chopped
- 1 bunch Green onions ; chopped
- 1 Green bell pepper ; chopped
- 1 Red bell pepper ; chopped
- 6 ribs Celery ; with leaves, chopped
- 2 teaspoons Thyme
- 3 cloves Garlic ; minced
- 1 pound Okra ; sliced
- 7 cups Vegetable broth
- 3 15-oz cans Diced tomatoes ; (fire roasted or regular)
- 1/2 bunch Parsley ; finely chopped
- 2 Bay Leaves
- 2 tablespoons Tamari soy sauce ; (or Pick-a-Peppa sauce, or a little of both)
- 1 teaspoon Hot sauce ; more or less to taste
- 1 teaspoon Paprika
- Salt ; to taste
- 1 pound Tofu ; cut into small cubes
- 8 cups Rice ; cooked
- File powder ; to taste
