Jenns Wild Rice Salad with Scallions
Ingredients
- 2 cups wild rice, purple or black
- 1/2 small head purple cabbage, slivered and chopped
- 1 handful walnuts
- 1 handful dried cranberries, chopped
- 1 bunch italian flat leafed parsley - or cilantro if you're feeling frisky!
- 1 meyer lemon, juiced, rind saved and chopped
- 1 bunch small bunch scallions
- Maldon sea salt
- 1 tablespoon preserved lemon rind
- 1/4 cup very good quality extra virgin olive oil, plus more for drizzling
- 1 small apple, diced. Pink Lady if available
- 4 tablespoons diced red onion
