Ingredients
- 1/4 cup extra virgin olive oil
- 1 medium onion
- 4-6 garlic cloves
- 1.5 pounds yellow summer squash (about 3 longneck or zucchini)
- 1/2 teaspoon kosher salt
- 2 tablespoons white (shiro) miso
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon red pepper flakes (optional)
- 1 pound short pasta noodles (macaroni, rigatoni, fusilli, etc.)
