- 3 medium-sized ears sweet corn, roasted, kernels removed, cobs reserved (2-2 1/2 cups)
- 1 1/2 quarts heavy cream
- 3 Russet potatoes, peeled and diced
- Fresh tarragon, chopped finely, for serving
