- 4 paninis, cut in half

- 4 large dill pickle spears, finely sliced

- large handful of coriander, roughly chopped
- small handful of oregano, leaves picked and roughly chopped
- 2 tsp ground cumin
- 5 garlic cloves, roughly chopped
- 1 tbsp neutral-tasting oil
- 1kg pork shoulder, any skin removed
