- For the roast:
- 2 pounds beef chuck roast (cut into 1½- to 2-inch cubes)
- 1 cup brewed coffee
- 1 cup beef broth or bone broth
- 1 small onion (chopped)
- 6 dried figs (chopped)
- 3 tablespoons balsamic vinegar
- Kosher salt
- Freshly ground black pepper
