Ingredients
- 1 lb cod, cut into large chunks
- 1/2 tsp salt
- 1/4 C + 2 tbsp 2% greek yogurt
- 1/4 C chopped fresh parsley
- 1 egg yolk, beaten
- 1 tablespoon dijon mustard
- 1 tbsp freshly squeezed lemon juice (from 1/2 lemon)
- 3/4 C + 2 tbsp panko (we used Progresso) or bread crumbs
- 3 scallions, minced
- 1/4 tsp freshly ground black pepper
- 1/4 C canola oil
