- 1/2 Cup diced carrots
- 1/2 Cup diced celery
- 1/2 Cup diced onion
- 1/2 Cup diced green onion
- 4 cloves of garlic, minced
- 1 Cup shiitake mushrooms, sliced in half
- 1 Cup shelled edamame
- 1/2 Cup dry white wine
- 1 Pound leftover turkey meat, off the bone, pulled apart or chopped
- 4 Cups gravy
- 1/8 Cup soy sauce
- 1 Tablespoon sesame oil
- 6 Cups mashed potatoes or mashed Japanese sweet potatoes
- 2 Tablespoons olive oil
- Crumbled nori or toasted sesame seeds, for garnish
- Salt and pepper, to taste
