- 0.5 c plus 3 tablespoons ketchup
- 4.5 t teaspoons dry mustard
- 8 oz ground pork
- 8 oz ground veal
- 8 oz ground round
- 2 large eggs, lightly beaten
- 2 t salt
- 1 t freshly ground pepper
- 1 t tabasco sauce, or to taste
- 0.5 t chopped fresh rosemary, plus more needles for sprinkling
- 2 T dark-brown sugar
- 1 T olive oil
- 1 small red onion, cut into 1/4 inch-thick rings
