- 2 cups canned oysters, drained (do not rinse)

- 1 cup buttermilk
- 1 tablespoon hot sauce
- 1/2 cup all-purpose flour
- 1 cup yellow cornmeal (not self-rising)
- 1/2 tablespoon seafood seasoning (like Old Bay)
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon freshly ground black pepper
- 2 cups vegetable oil, for frying
