Ingredients
- 3/4 pound butternut squash (1/2 of a whole squash or about 3 cups pre-cut)
- 3 tablespoons olive oil, divided
- 1/2 teaspoon salt
- 1 1/2 teaspoons ground cumin
- 1/3 cup tahini
- 1 1/2 cups cooked white beans (about one can of beans, rinsed and drained) such as cannellini, navy, or Great Northern
- 1/4 cup fresh lemon juice (about one lemon's worth)
- 3 garlic cloves
- 1/2 teaspoon paprika
