- 6 chicken thighs (preferably bone-in, skin-on)
- 1 tablespoon coconut oil, or the oil/fat of your choice
- 1 large yellow onion
- 1 red bell pepper
- 1 jalapeno (or less, or more, according to taste)
- 5 teeth of garlic
- 2 tablespoons ginger
- 1 tablespoon peanut butter
- 4 tablespoons soy sauce (2 tbsps. for cooking sauce, 2 tbsps. for marinade, if you want)
- 2 teaspoons fish sauce (not tbsps.!)
- 2 teaspoons Sriracha (or less, or more, according to taste)
- 1/2 tablespoon sugar
- 1 can coconut milk
- 1 lime
- 1 bunch cilantro
- 2 1/2 cups long grain rice
