Vegan Italian Roasted Eggplant Bisque
Ingredients
- 1 large eggplant, cut in half
- 2 large tomatoes, cut in half
- 6 cloves of garlic
- 2 tablespoons olive oil
- 1 onion, chopped
- 1 teaspoon dried thyme
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 pinch red pepper flakes
- 4 cups low sodium vegetable broth
- 1/4 cup non-dairy milk or cream
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 tablespoons Vegan grated parmesan cheese, for garnish
- 2 tablespoons Fresh basil for garnish
- 2 tablespoons diced tomato, for garnish
