Ingredients
- 4 eggs
- 4-6 mushroooms (white or shiitake)
- 1/2 average, medium butternut squash
- 2 teaspoon miso paste
- 2 tablespoon mirin
- 2 tablespoon low sodium soy sauce
- Dash of sesame oil for cooking and garnish
- A few chopped scallions for garnish
